Wheat, Nut and Dairy Free Animal Cookies For School...
How many of you mummies can bring up a childhood memory of playing with animal-themed biscuits? There is something really special about these imaginative treats. They make everybody happy, salty, sweet, seedy or plain, in any size any time they work their magic.
It was time to create my own animal cookies. You know me my recipes are all processed sugar-free and wheat free, mostly avoiding dairy too. The real reason for this? Well… so I can eat them too. Ha, No wheel power here. I'm all for healthy guilt-free snacks. ANYTIME!
1 1/2 CUP Buckwheat flour ( Despite the name, buckwheat is totally gluten-free. Buckwheat kernels are a triangular shape before they are ground into flour. Buckwheat contains a significant amount of fiber, and studies have shown that it helps slow down the rate of glucose absorption after a meal which helps to balance your blood sugar. Buckwheat is also a good source of protein and calcium. Perfect for kiddies )
1/2 jumbo oats (break it down a little in your food processor or blender to create a flour texture = oat flour)
1 teaspoon baking powder (GF free)
sprinkle with salt
1 teaspoon allspice
1 teaspoon cinnamon
1 teaspoon vanilla powder
1/2 cup xylitol sugar
1/2 cup solid unsalted organic butter or coconut oil
1 organic egg
Preheat the oven to 180.
Combine all the dry ingredients.
Add the butter and egg and combine together.
Wrap the dough in a plastic bag and let it rest for 30 min in the fridge. After the resting time, roll out the dough on a floured surface to 1/4 inch thick. Cut the animal shapes.
Please the cookies on baking sheet on your baking tray and bake for 15 min, till its golden brown.
