RAW CHOCOLATE CAKE RECIPE

This wheat, gluten, and dairy free beauty was my savior over the weekend. I wanted chocolate, something sweet, and I have been planning to make a raw cake for days. I’m glad I went for it, as the whole family loved it. My little boy stuck his finger in the middle so I had to cover it up with the berries.  I like to be honest.

 

RECIPE: 

FOR THE BASE: 

1 CUP ALMONDS

1 CUP BRAZIL NUTS

1 CUP DATES (PITTED)

1/3 CUP RAW CACAO POWDER

1/3 CUP DARK AND DAIRY FREE CHOCOLATE CHIPS (I JUST BLITZ UP SOME – 90% Pure – DARK CHOCK IN MY FOOD PROCESSOR )

2 TEASPOON CINNAMON OR VANILLA POWDER

OPTIONAL: TOAST THE NUTS IN THE OVEN IF THEY WERE NOT RAW TO REMOVE MOULD.

IN YOUR FOOD PROCESSOR OR BLENDER PROCESS THE NUTS.

I LIKE HAVING UNEVEN TEXTURE BUT IT'S UP TO YOU. WE LIKE THE CRUNCH.

YOU CAN PROCESS THE NUTS UNTIL THEY LOOK LIKE CHUNKY FLOUR.

ONCE THE NUTS ARE DONE, AND THE REST OF THE INGREDIENTS AND BLEND TOGETHER UNTIL ITS NICE AND STICKY.  YOU WANT IT TO LOOK LIKE A BIG BALL OF DOUGH.

TAKE A CAKE PLATE OR TIN AND PRESS IN THE MIXTURE WITH WET HANDS OR WET SPATULA TO AVOID STICKING. BE FIRM, BUT NOT TOO TOO FIRM.

PLACE IN THE FREEZER TO REST UNTIL YOU MAKE THE TOPPING.

 

INGREDIENTS FOR FILLING:

TWO AVOCADOS

1/3 CUP ALMOND MILK

1/3 CUP MAPLE SYRUP

1 TABLESPOON MOLASSES

1/2 CUP RAW CACAO POWDER

1/4 CUP COCONUT OIL

 

BLEND ALL INGREDIENTS TOGETHER IN A HIGH-SPEED BLENDER UNTIL IT'S REALLY SMOOTH. NO BITS OR LUMPS ALLOWED. YOU REALLY WANT THIS TO LOOK LIKE THICK, VELVETY CREAM.

TAKE YOUR CAKE BASE OUT OF THE FREEZER AND SCOOP ON THE TOPPING. USE A SPATULA TO EVEN IT AL OUT. PLACE IT BACK TO THE FREEZER TO SET FOR ABOUT 2 HOURS. ONCE THE CAKE IS SET AND HARD, THEN YOU CAN PURE OVER THE MELTED DARK CHOCOLATE ON THE TOP.

DARK CHOCOLATE ICING

1/2 BAR OF NON-DAIRY DARK CHOCOLATE MELTED OVER STEAM IN A GLASS BOWL.

TOPPINGS: 

ANY FRUIT (BERRIES AND BANANA GOES SO WELL WITH IT)

COCONUT MEAT, COCONUT SHAVING ALSO GOES INCREDIBLY WELL WITH IT. ALSO LOOKS BEAUTIFUL.

THIS RECIPE IS PERFECT FOR A HEALTHY BIRTHDAY CAKE FOR CHOCOLATE LOVERS. REMEMBER ITS NOT ABOUT GOING WITHOUT, ITS ABOUT  REPLACING THE NASTY STUFF WITH BETTER ONES.

NOTE:

THE CAKE KEEPS IN THE FREEZER FOR UP TO TWO WEEKS. EXCELLENT SNACK AS ITS PACKED WITH PROTEIN AND “HEALTHIER” SUGARS AND AVOCADO.

PLS NOTE THAT YOU CAN MAKE THIS RECIPE IN A REGULAR BLENDER. I SUGGEST USING A VITAMIX, BLENDTECH, OMNIBLAND OR OTHER POWERFUL BLENDERS OR MAGIMIX FOOD PROCESSOR. YOUR MAGIC BULLET WON'T BE SUITABLE FOR THIS RECIPE.
