Herby Dressing With Roasted Pine Nuts...
1/3 cup toasted pine nuts
1 clove garlic, minced
salt, pepper to taste
1 cup parsley chopped
1 cup basil chopped ( you can use doTERRA Basil essential oil in this recipe. Soak a toothpick in the basil essential oil and stier that in the dressing. A drop will be too much. )
1/3 cup water
2 tbsp raw apple cider vinegar
1 lemon juiced
1/2 cup cold pressed olive oil or avocado oil
Roast the nuts for 5 min in the oven.
In a blender or food processor, place the garlic, salt, pepper, oil, vinegar, and water. Blend together until it is smooth and creamy. Add herbs and pulse a few times to roughly chop the parsley and basil. Add it in with the water, apple cider vinegar, and lemon juice, and garlic. Combine the roasted pine nuts with the other ingredients. Transfer to an airtight container and store in the refrigerator. Use as a dressing for salads, vegetables, grains, or side dishes.
