Gluten Free Fruity Snack Bar Recipe...
Fruity Snack Bar is something I make all the time. It is totally guilt free, and not just for children. If I can give you one bit of advice, it is that you need to make a double portion because this will not last longer then 30 min. My husband absolutely loves them. If we don’t have any he actually asks for them. Originally I created this recipe for the kids lunch boxes , but it turned out to be a family favourite. IT ISNT A FLAP JACK RECIPE DONT GET CONFUSED THE TEXTURE IS TOTALLY LIKE BISCUITS. YUMMMMM
Wheat free, Gluten free, egg free, processed sugar free, dairy free and nut free! Oh my Lord and it is heavenly!!!
1 1/2 cups buckwheat flour
1 1/2 cups jumbo oats (jumbo oats are naturally gluten-free, but if you are celiac please use GF oats, just to make sure)
1/2 cup xylitol sugar
1/2 teaspoon salt (rock or Maldon)
3/4 cup unsalted organic butter or solid coconut oil – we need them chopped into 1/2 inches
2 tbsp cold water
3/4 jar of jam (no added sugar jam, just 100% fruit )
Preheat the oven to 220.
In your blender or food processor break down the oats. Not into a flour but just so they are finer than whole oats.
In a bowl mix together all the dry ingredients: buckwheat flour, oats, sugar and mix well.
Add the solid butter or coconut oil and start crumbling it together. Finally add the water. You want the mixture to hold together when pressed.
Grease your baking dish , line it with baking paper or parchment paper, and grease the top.
Divide the dough into two equal parts. One will be the bottom of the cookie and the other half will be the top.
Place half of the dough into your baking tray. (like when you make a crumble ) and press down on it gently. Apply the jam, be generous. Crumble the second half of the dough on to the jam layer. Press down gently , not too much, just enough for the layer to hold together.
For pressing you can use the back of your hands or a spatula.
Bake for 45 min, until golden brown on 180.
Let it cool and cut into bars.
You can store them up to 4 days in the fridge. Perfect with a cup of tea.
